beautiful and crispy outside fruit and nut cookies

Ingredients:

 

10oz Plain flour
2tsp Baking powder
½ tsp Salt
¼ tsp Cinnamon (optional)
2oz Sultanas
1½ Chopped Brazil nuts
5oz Raw cane sugar
60ml Vegetable oil
½ tsp Vanilla extract
100ml Water (room temperature)

Method:

 

Heat oven to 180c
Place two cookie trays into the oven so the warm before use.
In a large mixing bowl add all the dry ingredients and make a well in the middle if the mix.
In a small bowl mix all the dry ingredients.
Pour the wet mix ingredients into the well of the dry mix and mix with a wooden spoon.
The mix should resemble a soft dough, add a little more water if needed. (A fork when inserted into the middle of the mix should remain standing).
Divide the mixture into 18 balls on to the cookie sheets.
Press the balls down slightly with the back of a spoon.
Place in the oven and bake for 12 minutes. (If your oven is not fan assisted you may need to turn the cookie trays half way through cooking).
Cookies are done when pressed with a finger they feel slightly softer than you would like, as they continue cooking on removal so will harden slightly whilst cooling.
Remove from baking tray and place on a cooling rack.

Notes:

 

The basic cookie mixture works well with numerous variations, instead of sultanas and nuts, try carob chips, cherries, or coconut (these may need a little less sugar and a little more water).
