Lovely veg which goes well with any nut roast or pasta

Ingredients:

 

1 Courgette, sliced
1 Red pepper, coarsely chopped
1 Yellow pepper, coarsely chopped
1 Red onion, coarsely chopped
10 Cherry tomatoes
3 Cloves garlic, sliced
2tbsp Olive oil
½ tsp Oregano
Salt & Pepper to taste

Method:

 

Preheat oven to 190c.
Mix all of the ingredients together in a large flat roasting dish.
Bake in for 25-30 minutes.

Notes:

 

There are numerous ways to serve this dish, as an accompaniment to veg burgers or nut roast, or even as a filling for lasagne. I like to use it as a lunch placed on top of toasted bread and drizzled with olive oil.
